Next week is Halloween! Ghosts, goblins, super heroes, fairy princesses and more are soon to come knocking at your door hoping to “trick” you into handing over some treats. While I am all for candy bars, gummy worms and bubble gum, it is not a bad idea to also offer some healthier alternatives to your own little monsters. Here are some fun ideas to serve and bring along to your celebrations.
“Eyeball” Appetizers: Spread peanut butter on round whole-grain crackers. Top with a slice of banana and a mini-chocolate chip to create an “eyeball.” Other options to try are Nutella or cherry jam (for a “Bloody Eyeball” – ewwww!).
Jack-O-Veggie Tray: Spread baby carrots out onto a shallow round dish. Add two small bowls or ramekins filled with ranch dressing to create “eyes.” A small cucumber slice in each bowl/ramekin can serve as the iris of the eye. Use cucumber slices, cut into fourths, to create jack-o-lantern “teeth” for the mouth.
Ghost Pops: Slice a banana in half crossways. Carefully insert a popsicle stick into the cut side of each banana half. Spread each with vanilla yogurt, use mini-chocolate chips for the ghost’s eyes. Place on a tray with parchment paper. Freeze until firm.
Pizza Mummies: Spread English muffin halves with pizza sauce, top with pizza cheese, leaving a line of space for 2 black olive “eyes” slices. Broil until the cheese is melted and a bit bubbly.
Candy Corn Sundae: To a small juice glass, add a layer of pineapple chunks and a layer of mandarin orange slices. Top with a fresh whipped cream and a candy corn “cherry.”
